Recipe #21: Turkey and Feta Stuffed Peppers
Confession: I had never had stuffed peppers before. I know. They’re totally classic and old school, and up my alley, but I just never had them growing up and never thought to make them. Until I saw Eat, Live, Run’s recipe, and figured it was about time to try them out. I’m glad I did! These were delicious, though I did tweak the recipe a little. I used about half the cheese called for (who am I?) and added a bunch of chopped veggies to the sautee pan (mushrooms, zucchini) for added healthy heft. These were an easy and delicious fall meal, perfect for a chilly night. 
Suggestion - if you have some left over after stuffing the peppers, save it, and mix it with some extra chopped tomatoes and sauteed onions later on for a hearty and healthy chili-esque soup.
