Recipe #20: Crockpot Carnitas Beef
Ahh, how I love a good and easy crockpot recipe. I made this one a while ago and forgot to share it, partially based on how truly easy it was. It almost feels like cheating! Eat Live Run uses this to make carnitas tacos, which look pretty damn good, but I actually used most of it to create taco-bowls a la chipotle. Either way, the meat itself is delicious - flavorful and juicy, with just the perfect amount of spice. The crockpot factor makes it ideal for a busy weeknight meal, but just beware to adjust cooking time if your cut of meat differs in size from the recipe. Mine got just the slightest bit overcooked, since I had a smaller amount and kept the same cooking time.
