Recipe #4 of 2012: Overnight Oats
I am a big breakfast person and am constantly looking for new and easy options to have during the week that will give me the energy to get through the morning. Last week, I gave Oh She Glows’ Overnight Oats a try.
The recipe itself is great: easy, healthy, and delicious, the type you memorize after making it twice. I made it her traditional way with banana, and then also made it the way suggested in the comments with cutting out the banana and using unsweetened pumpkin instead. I enjoyed both, and even as not-huge banana fan, preferred that way. I actually didn’t add anything to in the morning, as she suggests (no maple syrup, nut butter, etc). It would probably make it even better, but I don’t think it’s necessary.
The recipe has quickly become a Jon favorite, as well, with him requesting it each night for the following morning. It is easy to make more than one portion at a time, and I find it convenient to make it directly in single-serving tupperwear that be grabbed from the fridge in the morning.
