Is there anything better than warm and hearty soup when you’re sick? After succumbing to nasty kid germs (the flu has hit in full force), the only thing I wanted yesterday was a big bowl of soup. I came home and made my favorite kind: Whatever Is In The Fridge Soup. Here’s how this one went:
1/2 an onion, chopped
2 carrots, chopped
2 celery stalks, chopped
1/2 sweet potato, chopped
1 grilled chicken breast, shredded 
6 cups of chicken stock
1 can of white beans, rinsed
one small palm of brown rice 
1 bunch of spinach, chopped
Talk about cleaning out the fridge, but this soup couldn’t be easier. Sautee onion, carrot, and celery together until soft. Add sweet potato, chicken, beans, and stock. Bring to a boil. Add in the rice and simmer until rice is cooked. Finally, add in the spinach and cook until wilted. Season with salt and pepper throughout, to taste. Best topped with a squirt of sriracha (but then again, what isn’t?)
