Recipe #3 of 2012: Homemade Sweet Potato Chips
This was so easy, I am reluctant to call it an actual “new recipe.” Nonetheless, it was a new endeavor, for me.
I have been receiving bi-weekly Urban Organic deliveries, which is very similar to CSA ones for those of you who do that. During this time of year, there isn’t much variety to the boxes, however it’s still a fun way to receive produce. While I have asked never to receive basic potatoes (we just never really eat them), we have ended up with about 12 sweet potatoes. To the point where I sent my friends home from our game night with at least 2 each.
So this recipe? GAME-CHANGER. To the point where I made these twice in two days. I do recommend turning the slices over in between cooking time, and, to my taste, cooking til that slight brown shows up. That brown indicates that they will have the crunch I associate with chips. Don’t be shy; use a lot of salt and pepper.
